Homemade Pizza Sauce

Ingredients
- 6 kg tomatoes (ripe & red)
- Hot water as required
- 3/4 cup cooking oil
- 3 medium chopped onion
- 1/2 cup chopped garlic
- 1/2 cup tomato paste
- 4 tsp sugar
- 2 tsp dried oregano
- 2 tsp red chili crushed
- 2 tsp or to taste salt
- 1 tsp or as per choice red chili powder
- 6 tsp vinegar
- 1/2 cup fresh basil leaves
Instructions
- Wash tomatoes carefully with water.
- A small cut make on the bottom of tomatoes with the help of sharp and simple knife.
- Then in hot water, add tomatoes, bring it to boil & boil on medium flame until tomatoes are tender (30 minutes).
- Let them cool.
- Peel tomato skin & chop coarsely one third quantity of boiled tomatoes with the help of knife & reserve for later use.
- Add remaining two third quantity of boiled tomatoes in a large bowl & blend well with the help of blender.
- In a wok, add oil, chopped onions & fry until light golden brown.
- Add garlic & sauté for at least 2 minutes.
- Add chopped tomatoes, tomato paste ,mix well & cook on medium heat for at least 4-5 minutes.
- Add blended tomatoes, sugar, dried oregano, red chili crushed, salt to taste ,red chili powder, vinegar, fresh basil leaves, mix well & cook on high flame for at least 10-12 minutes & mix continuously, cover partially & cook on low flame for 30-40 minutes (mix in between).
- Let it cool completely.
How To store Homemade Pizza Sauce
In Refrigerator
- Transfer small batches into jars or zip-lock bags.
- Store in the refrigerator for up to 1 month (maximum yield of 3 kg).
In Freezer
- Transfer, if possible, in small batches into zip lock bags so you may store them in the freezer to conserve space.
